Bengal Gram & Quinoa Salad with Mango Dressing

This is a salad that eats like a meal! It’s packed with protein and fibre and of course flavour! It pretty much tastes like summer. The quinoa and grams are wholesome and nutty, the veggies add a burst of freshness, and the mango dressing is sweet and creamy.

Now if you aren’t familiar with Green Bengal Grams, then you probably don’t live in an area where they are widely available and will likely have to look for them in the freezer section of your local indian grocer. They are freshly picked green chickpeas, and have a more tender, fresher flavour than their dried cousins. However, if you just can’t find them, you can substitute them with whatever chickpeas you can find.salad

This salad will make an excellent side dish, but is filling enough to have as the main course as well.IMG_1143

Bengal Gram & Quinoa Salad with Mango Dressing

Makes about 4 portions, and can be stored in the refrigerator for 1 to 2 days.

Gram Ingredients:

1 cup Green Bengal Grams
1tbsp Olive Oil
½ tsp. Cumin Powder
½ tsp. Paprika
½ tsp. Salt

Additional Salad Ingredients:

½ cup Quinoa
1 Onion
12 to 15 Cherry Tomatoes
1 Avocado
½ cup Cilantro
2 Mini Cucumbers

Mango Dressing Ingredients:

1 Small Mango
¼ cup Cilantro
½ tsp. Cumin Powder
¼ cup Olive Oil
1 tbsp. Brown Sugar
Salt and Pepper to taste
¼ cup Water (if required)

Directions:

  • Prepare the grams;
    • Boil until tender and strain.IMG_3325
    • Heat the oil in a skillet, and then add the grams, cumin powder, paprika and salt.
    • Sauté 3 to 4 minutes, then remove from heat and cool.
  • Prepare the quinoa as per package instructions
  • Finely dice the onion.
  • Half the tomatoes.
  • Finely chop the cilantro.
  • Slice the cucumbers.
  • Slice the avocado.
  • Combine all ingredients in a large bowl.
  • Prepare the dressing;
    • Add the flesh of the mango, and the additional ingredients (except the water) to the blender and pulse until smooth.
    • Add the water if the dressing is initially too thick. Pulse to combine.
  • Top the salad with the dressing and serve.Greenchickpeassuperbowl
