Strawberries are in season! Is there anything better than a freshly picked, sun-ripened strawberry? Don’t think so.
My neighbour yelled out to me the other day, “I just picked some strawberries, do you want some?” Hells ya, I want some! Two things immediately came to my mind when she passed me the bowl; Sangria! (which I made and shared with said neighbour) and this salad!
Too often we get in a rut about these things and think we can only use fruit for desserts, but that’s just not true. Strawberries and balsamic vinegar make a glorious pair, add in the creaminess of the goat cheese and magic happens! Like fireworks in your mouth. Obviously, the recipe below has quantities to help you prepare this dish, but I encourage you to play fast and loose with it and customize it to your tastes. I like to add about half of the mix-ins to the greens and then garnish the top with what remains. This way you don’t loose all the tiny bit to the bottom the bowl, and it is obvious to everyone just what is in there.
If you happen to be Canadian, you are more than aware that this coming Saturday is the country’s 150th birthday (because it’s not like they will let us forget, they’ve stamped that logo on everything!) This is the perfect festive salad to serve without falling into the maple and bacon cliché. For our American friends, consider yourself forewarned. You have ample time to find a blue serving bowl, or you could add blueberries! If you are packing it to go, I recommend swapping the spinach for kale. Spinach will go limp in a vinaigrette relatively quickly, where as kale will hold up all afternoon.
Balsamic Strawberry and Goat Cheese Salad
This recipe takes about 10 minutes to prepare, and should be served immediately.
|¼||Medium Red Onion|
|¼ cup||Slivered Almonds|
|3 tbsp.||Olive Oil|
|2 tbsp.||Balsamic Vinegar|
|pinch||Salt and Pepper|
- In a small jar, combine the ingredients for the vinaigrette. Cover and shake vigorously to combine.
- Remove the tops and slice the strawberries.
- Crumble the goat cheese.
- Slice the onion into thin strips.
- To a mixing bowl add the spinach.
- Pour the vinaigrette over the spinach and toss to combine.
- To the bowl , add about half of strawberries, goat cheese, onions and almonds. Toss to combine.
- Garnish the top of the salad with the remain strawberries, goat cheese, onions and almonds,
- Serve Immediately.
