Honey Glazed Kebab Plate

My mister is pretty obliging of all the meatless meals that cross his plate, but sometimes he wants meat. There is nothing more satisfy to that primal craving than fire grilled meat on a stick. This kebab plate is a quick and easy dinner that will satisfy your inner carnivore.

The spice blend has a recognizably middle-eastern flavour profile that you can combine with whatever meat you prefer, and the warm spices beautifully compliment the sweet tang of the honey glaze.kebabs

We are serving these kebabs with the lime cilantro rice to balance the riches of the meat with a lighter fresh flavour. And what would a kebab plate be without some pickled vegetable and hummus? I love purple cabbage, I love the peppery flavour and the crunch. This quick purple cabbage pickle has become a go to in my kitchen to add that little “something” to a meal, and our beet hummus is the perfect finishing touch.

Kebab Plate

Makes 4 portions, and takes approximately 30 to 45 minutes to prepare.KebabSpices

Kebab Spice Mix Ingredients:

2 tsps. Coriander powder
2 tsps. Cumin Powder
2 tsps. Garlic Powder
2 tsps. Salt
1 tsp. Chili Powder
1 tsp. Turmeric
1 tsp. Dry Thyme
1 tsp. Ground Cinnamon
¼ tsp. Nutmeg

Honey Glaze Ingredients:

½ cup Honey
2 tbsps. Apple Cider Vinegar
1 tsp. Chili Flakes
1 tsp. Garlic Powder
1/2 tsp. Salt

Lime Cilantro Rice Ingredients:

1 ½ cups Rice
1 Lime
½ cup Cilantro / Coriander
1 tbsp. Olive oil (Optional)
1/2 tsp. Salt

Moreish Purple Pickle Ingredients:

250g Purple Cabbage (About ¼ head)
1 Medium Carrot
2 tbsps. Apple Cider Vinegar
1 tsp. Salt
1 tsp. Sugar

Additional Ingredients:

1 kg Protein of Choice (Beef, Lamb, Pork or Chicken)
1 cup Roasted Beet Hummus

Directions:

  • Begin by preparing the pickle to allow it enough time to cure slightly;
    • Shred the cabbage.
    • Peel and slice the carrot into thin sticks.
    • Add the cabbage, carrot, vinegar, salt and sugar to a bowl.
    • Toss together and set aside.
  • Prepare the rice as per the package instructions.
    • We like to sauté the dry rice in olive oil before adding the water to help the grains from sticking together after cooking.
  • While the rice is cooking, zest the lime, and chop the cilantro.
  • Prepare the spice mix by combining all the ingredients in a bowl.
  • Cube the meat into slightly larger than bite size pieces.IMG_0603
  • Toss the meat in the spice mix and then skewer.
  • Prepare the honey glaze by combining all the ingredients in a dish and whisking together. Set aside about half of the glaze.IMG_0584
  • Preheat your barbecue or electric grill.
  • When the rice is cooked, add the cilantro, the zest and juice of the lime. Salt to taste and fluff the rice to combine.
  • Grill the skewered meat to desired doneness, flipping half way. Brushing with the honey glaze as it cooks.
  • Remove the meat from the grill, drizzle with the reserved glaze and let rest 3 to 4 minutes.
  • Serve the skewers with the rice, purple pickle and hummus.Kebabs2
