Raita is a seasoned yogurt used as a side dish or condiment to help reduce the spice of a dish. Boondi are pea sized drop of fried gram or chick pea flour. They are a tempting little snack and added to raita they add a tantalizing crunch. To boost the flavour just a bit more we used Masala Boondi.
If you are going to take the time to prepare a nice Indian meal, then take few minutes needed to prepare some raita. Sure, plain yogurt will be fine, in the same way yellow mustard on a sandwich is fine, but it’s no Grey Poupon.
If you have never tried Boondi before, check the snack aisle of your nearest Indian market, or the international aisle of your favourite well stocked grocery store.
This dish should be prepared just before serving, as the Boondi will become soft within about an hour.
